How to make chicken soup

As a child, the first medicine I took to treat a cold was a plate of chicken soup from my grandmother Elsa. When I grew up and started going to parties, drinking alcohol and suffering its consequences, my treatment the next day (sometimes even in the early morning when I arrived) was a dish of chicken soup from my mother.

If for some reason I vomited, my first food to eat was this soup.

Today, as an adult, I still use this wonderful elixir to cure various ills. I think it works for almost everything, even to regulate moods.

Ingredients and recipe to make chicken soup

The most important thing is chicken (obviously), preferably shells, bones , neck and some piece of breast, for its meat.

Also vegetables, because it is a chicken soup with vegetables. You can use what you have in your fridge but I recommend carrots, pumpkin, onion, potatoes, peppers and aromatic herbs such as cilantro, parsley and mint.

Recipe chicken soup

  • 6 at 8 cups of water
  • 3 medium potatoes
  • 1 medium carrot
  • 1 chunk pumpkin equivalent in size to potatoes
  • 1 chives
  • 1 medium onion
  • Some mint leaves
  • 1 chili pepper optional
  • 1 pepper
  • 1 leek stem
  • Sheets of parsley
  • Sheets of coriander
  • 1 stalk and celery leaves
  • Oregano powder
  • Sheets of laurel
  • Salt
  • Pepper
  • Soup noodles optional
  • Preparation

    1. In a large pot, boil the chicken pieces in approximately 2 liters of water. Let it boil for about 15 minutes. During this time you should be aware of constantly removing the foam that accumulates on the surface.
    2. Add the onion, pepper and chilli previously chopped in julienne strips and the leek in thin casters.
    3. Then add salt, pepper, oregano and a couple of hours of laurel. These measures are subjective and depend on your taste. Start with a small amount and you can increase it later.
    4. After it boils for a while, add the chopped pumpkin into pieces of 3 or 4 centimeters. Do the same with the carrot.Try the salt and pepper in case you need more.
    5. A few minutes before turning off the fire incorporates finely chopped herbs: coriander, parsley, celery, mint and chives.
    6. Turn off the heat and let sit a few minutes.

    If you want to make chicken soup with noodles ( of finite, small), cook them separately in another pot with a little water and add them to the dish when serving.
